Arroz con Pollo


8 tbsp oil

14 lbs onion, diced

2.5 lbs green pepper, diced

2.5 lbs red pepper, diced

½ cup garlic, minced

½ cup turmeric

½ cup salt

5 quarts water

5 quarts chicken broth

2 cups cilantro, finely chopped

6 quarts brown rice, dry

2 lbs peas


step 1 Add rice to water and chicken broth.

step 2 Stir in turmeric and salt.

step 3 Bake rice in a preheated oven at 350 degrees Fahrenheit for 50 minutes or until tender and all liquid is absorbed.

step 4 Heat oil in a tilt skillet and add onion, peppers, garlic, and peas.

step 5 Sauté until vegetables are tender, about 5–7 minutes. Add cilantro.

step 6 Add vegetable mixture to cooked rice. Mix well.
